SUGAR FREE PEANUT BUTTER (OR SUNFLOWER SEED BUTTER) MOUSSE

We’ve all been there -that late afternoon crash. Can’t think, can’t focus, sooooooo t….i….r…e….d. Too little sleep, poor diet choices, stress at work or home, skipping meals…. all of these stressors can send your body into a slump, mentally and physically. While we have been trained to reach for the not-so-healthy pick-me-ups loaded with simple carbs and sugars, this treat will help you combat the mid-afternoon slump in a healthy, delicious manner. You’ll not only feel more alert, but cutting out sugars can also help you improve your mood. What’s not to love????!!!!

While not fully keto in that I used a bit of maple and date syrups, you can skip the syrups all together. Instead, top this with a few fresh berries if you want a touch of natural sugar while still keeping this recipe keto. It’s also not vegan, but you could easily substitute the whipping cream and cream cheese for cashew cream “cheese” or whipped tofu. For a third option, you might like to try coconut cream whipped cream, again avoiding the refined white sugar and using a touch of maple syrup instead.

It’s contains lots of good proteins from the peanut butter and dairy goodies, and there are no refined sugars and only a small amount of natural sugars within this dish. Sugar Free Peanut Butter (or Sunflower Seed Butter) Mousse

  • 1 Pint Organic Whipping Cream or Vegan Subsitute
  • 1 TBSP Pure Organic Maple Syrup
  • 1/2 Cup Organic Unsweetened Peanut Butter or Sunflower Seed Butter
  • 4 Oz Organic Cream Cheese, Softened
  • 1 TBSP Organic Peanuts or Sunflower Seeds
  • 1 Tsp Organic Date Syrup

In a large bowl with a hand mixer, whip heavy whipping cream and maple syrup until stiff peaks form.

In a separate bowl, whisk the peanut butter or sunflower seed butter with the cream cheese (or vegan cream cheese) until the mixture is smooth and becomes less dense.

Gently fold the cream cheese mixture into the whipped cream mixture.

Keep chilled until ready to serve. When ready to serve, dish into small bowls, drizzle with date syrup, and top with peanuts or sunflower seeds.
