I don’t know about you, but if you’re like me, you’ve been relishing the past few days as spring slowly wraps its arms around the northern hemisphere. New life, new growth, new beginnings. It feels so hopeful. So joyful. According to the Torah, we are told by God it is the beginning of our year (which makes sense since it’s when everything is coming back to life). It’s also filled with many of our special holidays such as Pesach (Passover), the Feast of Unleavened Bread, and the Feast of Firstfruits.

It’s also that time of year when the earth begins awaking from its winter rest. Baby calves run and jump through the fields. Baby chicks flitter around their brooding boxes. Grass pokes its head through the cold, brown covering of earth. It’s as if the entire planet comes to life (one hemisphere at a time.) It truly is the most wonderful time of the year to me:).

In the garden, one of the very first crops to signal spring is arugula. Its super cold-hardy traits let it bloom and thrive when many other plants must be snuggled safely in a greenhouse. Arugula, in all its slightly spicy and peppery glory, on the other hand, stretches and twirls its beautiful leaves upwards each cool spring day, defiantly standing strong against the chills of April nights -even down to 20 degrees Fahrenheit!

Some greenhouses boast of red bulbous tomatoes in the springl, but this far north, that’s not a very common sight to see. Those plants are usually just beginning to take root in tiny pots within greenhouse walls, patiently waiting for the earth to warm before stretching their toes into the beautiful, brown soil. Snap peas, however, are a wonderful spring crop to plant, and they are one of the first (and most delicious) treasures of the garden’s harvest.

This salad incorporates two of spring’s delightful bounties–arugula and snap peas. Paired with the delicous Tangy Yogurt Lime Sugar Free Salad Dressing,it’s the perfect treat for spring!

Spring Snap Pea Salad

  1. Arugula
  2. Snap peas
  3. Tomatoes
  4. Sugar free salad topper such as the one shown from Go Raw
